I've been vegan for nearly 10 years and love sharing my easy recipes online to show everyone how delicious vegan food can be. This is my family's go-to soup to make on those cold nights ahead, and it always surprises people with how flavorsome it is, despite its simple ingredients.

Serves 2 - 4
10 minutes to prepare and 25 minutes to cook

Method

  1. Melt butter in a pan, roughly chop all ingredients and cook for 5 minutes. Keep stirring.
  2. Add 3 veg stock cubes into 2 pints boiling water and add to the pot.
  3. Leave to cook until potatoes are soft.
  4. Blend with a mixer.
  5. Add salt, pepper, 1/2 tsp nutmeg

Ingredients

  • 1 lb potatoes
  • 1 large onion
  • 1 cucumber
  • 2 oz butter
  • Nutmeg
  • OXO Vegetable stock
