Adventure means so much to me, especially after losing my younger brother in 2021. I gained a new found respect for living life and enjoying it. Serves 2 - 3
10 minutes to prepare and 35 minutes to cook

Method

  1. Fry a diced onion for 5 minutes, then add 2 crushed garlic cloves, a sliced red and sliced yellow pepper (I used green this time)
  2. After 2 mins add 600g diced chicken and brown all over, then add a tablespoon of paprika, a tablespoon smoked sweet paprika (I didn’t have this so did 2 of the normal one), black pepper, 2 tablespoons tomato puree and a teaspoon dried oregano
  3. Add 400ml chicken stock, turn heat down and simmer for 25 mins
  4. When the sauce has thickened remove from heat, stir through 75g light cream cheese and serve this is 273 cals per portion
  5. We served this with 75g rice per person

  • 75g light cream cheese
  • 75g rice
