Adventure means so much to me, especially after losing my younger brother in 2021. I gained a new found respect for living life and enjoying it. 10 minutes to prepare and 35 minutes to cook
Method
- Fry a diced onion for 5 minutes, then add 2 crushed garlic cloves, a sliced red and sliced yellow pepper (I used green this time)
- After 2 mins add 600g diced chicken and brown all over, then add a tablespoon of paprika, a tablespoon smoked sweet paprika (I didn’t have this so did 2 of the normal one), black pepper, 2 tablespoons tomato puree and a teaspoon dried oregano
- Add 400ml chicken stock, turn heat down and simmer for 25 mins
- When the sauce has thickened remove from heat, stir through 75g light cream cheese and serve this is 273 cals per portion
- We served this with 75g rice per person
