10 minutes to prepare and 35 minutes to cook

Method

  1. Chop the vegetables.
  2. Saute in the oil for 5 minutes.
  3. Add the lentils, tomatoes, herbs and stock.
  4. Simmer gently for 30 minutes.
  5. Season and serve!

Ingredients

  • 30 g olive oil
  • 160 g onions, quartered
  • 100 g celery stalks
  • 2 garlic cloves
  • 200 g red split lentils
  • 2 dried bay leaves
  • 2 - 3 sprigs fresh thyme, leaves only
  • 400 g tinned chopped tomatoes
  • 800 g vegetable stock or 800 g chicken stock
  • 1½ tsp fine sea salt
  • ½ tsp ground black pepper, or to taste
