- 30 g olive oil
- 160 g onions, quartered
- 100 g celery stalks
- 2 garlic cloves
- 200 g red split lentils
- 2 dried bay leaves
- 2 - 3 sprigs fresh thyme, leaves only
- 400 g tinned chopped tomatoes
- 800 g vegetable stock or 800 g chicken stock
- 1½ tsp fine sea salt
- ½ tsp ground black pepper, or to taste
