Katie’s Diet coke chicken

Thermos Taste for Adventure

I’ve recently gone on a bit of a health kick and I have been trying to make healthier choices and meals. However, I didn’t want to give up my favourite meals or have to have bland, tasteless food. With that in mind, I’ve been on the hunt for ‘fakeaway’ style recipes that have all the flavour but swap certain ingredients to make them healthier. This is one of my favourites and would be amazing in a Thermos flask to be eaten on the go, at work or on a walk.

15 minutes to prepare and 40 minutes to cook

Method

  1. Spray a large non-stick pan with low-calorie cooking spray and put it over a high heat. Add the chicken, peppers and onion and stir-fry for 5-7 minutes, or until lightly browned.
  2. Add the diet cola, stock, passata, tomato puree, garlic, worcestershire sauce, soy sauce and herbs and stir well. Bring to the boil, cover, reduce the heat to medium-low and simmer for 12-15 minutes.
  3. Add the sugar snap peas, stir and increase teh hear to medium-high. Cook for another 10-15 minutes, or until the chicken is cooked through and the evg is tender. Serve with the mashed potato.
