If you like it extra garlicky, add a bulb of garlic in with the tomatoes to roast. Take the bulb out of the dish when cooked and squeeze the gooey garlic into the pan. A a mum with her own business as well as working full time, I need quick and tasty meals that suit both me and my daughter. This pasta dish is one of my favourites and fits perfectly in a food flask to take out on our adventures too!
