I am a young working mum with one hungry son, so I need recipes that are quick, but also healthy and tasty. My chicken and asparagus lemon parcels are quick and easy to put together and don’t take too long to cook either.

5 minutes to prepare and 45 minutes to cook
Method
- Wrap chicken breasts in prosciutto / parma ham while tucking the asparagus in on top while raw.
- Place in a baking dish.
- Squeeze some lemon juice over the chicken and sprinkle in olive oil. Put lemon slices on top of chicken and cover in foil.
- Bake for 25 minutes at 200 degrees.
- Remove foil and bake for a further 5 mins until slightly crispy on top is nice and juicy and ready to serve with potatoes or rice.

- Olive oil
- 1 pack of asparagus
- 1 pack of prosciutto
- Basil and thyme / seasoning
