Method
- First, put skillet on medium heat and add a package of cherry tomatoes with some olive oil and butter and brown.
- Add garlic and stir together, as the cherry tomatoes start to cook, crush them down.
- Add some dried parsley and oregano and salt and pepper with a tiny pinch of sugar.
- Squeeze in a wedge of lemon.
- Add fresh basil.
- Add in the shrimps until cooked.
- Add some capers and kalamata olives.
- Crumble some fresh feta over the top and add more fresh basil.
- Serve with some warm crusty bread to dip with and enjoy!
Ingredients
- 4 oz shrimp
- 1 tbsp butter
- 1/2 tbsp olive oil
- 1 carton cherry tomatoes
- 1 tbsp basil
- 1/4 tsp oregano
- 1/4 tsp red pepper flakes
- 1/4 tsp parsley
- 3 cloves fresh minced garlic
- 1 lemon wedge, squeezed
- 1 tiny pinch of sugar
- 1 oz feta, crumbled
- Basil to garnish
- 1 tbsp kalamata olives
- 1 tsp capers
